I’ve made a few chaos cutting boards. I don’t mill wood to same thickness but create the thickness with rip cuts on the table saw. I get strips of random width when rotated 90 degrees for glue up. I also use multiple color species.

I think one of the problems with paper is that your kerf size is practically zero. That would really affect the pattern.

After your first angle cut and realignment, it started to look like parquet flooring to me
This technique needs serious patience 😅 Each glue-up needs drying, clamping, then cutting again. But the result is one of a kind, no second board will ever look the same.
